Haven't you heard? January is National Soup Month! And what goes better with a grilled cheese sandwich than a piping-hot bowl of goodness? It's January after all and we can't think of a better mid-winter warmer than a grilled cheese and a cup of scratch-made soup.
It takes us bullions of hours...
... to make soup this good. While we spend a lot of time talking about how we craft each of our sandwiches using the best ingredients from producers and farmers we love, our soups are also given that same attention. We start with the base of any good soup, the stock which we take the time to make in-house. For example, our Creamy Old-Fashioned Tomato Soup starts with a country ham stock. The process to make this stock is a closely guarded secret, we'll tell you this much... they key to a good ham stock is a low simmer for a long time. We're not talking an hour or two here, this stock requires hours of gentle heat to extract as much of those delicious ham flavors as possible. While some might roll their eyes on spending this much time on one component for a tomato soup, we find that it makes all the difference. Same with the Roasted Red Pepper and Tomato Soup. The basil and parsley gremolata, while seemingly simple, requires a delicate balance of flavors to pair perfectly with the roasted peppers.
